Ingredients
- 4 Large Tortilla Shells
- 4 Chicken Breasts
- SHOP SAUCE
- 1 Teaspoon Olive Oil
- 1 Tablespoon Butter
- 1 Large Yellow Onion Sliced
- Pinch Brown Sugar
- Salt and Pepper To Taste
- Sour Cream and Sliced Green Onions For Serving
Servings: people
Instructions
- Season chicken breasts with salt and pepper on both sides. Cook chicken in oven at 375 degrees for 30 minutes. Remove from the oven and brush both sides with Shop Sauce. Continue cooking for approximately 10 more minutes, or until chicken is cooked thoroughly.
- Melt 1 tablespoon butter in a large frying pan over medium-low heat.
- Once melted, add the olive oil and onions, stirring occasionally, until they are deep golden brown and caramelized - about 30 minutes. Add a pinch of brown sugar and season well with salt and pepper. Remove from heat and set aside.
- Chop the chicken into small pieces and generously toss with Shop Sauce.
- Lay your tortilla flat (using same pan, don’t worry about washing it) and sprinkle cheese evenly. Top with caramelized onions and chopped chicken and then another layer of cheese. Top with a second tortilla.
- Cook for about 2-4 minutes, until golden brown on the bottom. Carefully but swiftly flip the quesadilla…you may need to spray your pan first to avoid sticking. Cook for another 2-4 minutes on the other side, or until cheese is melted.
- Cut each quesadilla into 4 wedges and serve with a drizzle of Shop Sauce…serve while hot! Sour cream and chopped green onions are also great!
